CHILLI PANEER DRY

Ingredients:
Marination:
Paneer-200gms cubed
Cornflour-2tsp
Maida-1tsp
salt
Pepper pd
water - as needed
To make chilli paneer:
Oil-2tbsp
Gingergarlic-2tsp chopped
Onion and capsicum cubes
Soysauce-1tsp
Redchillisauce-1tbsp
Tomatoketchup-2tsp
Greenchillisauce-1tsp
Salt
Pepper pd
Ajinomotto-1  pinch optional
Springonions
water needed
Method:
In a bowl add paneer, flour,salt,pepperpd and mix.
Add little water just to coat flour with paneer.
Heat oil in kadai and deep fry paneer till light brown .
Fry all paneer and keep it aside.
Heat oil in tawa.
Add chopped gingergarlic and saute.
Add cubed onion and capsicum .
Add sauces and mix .
Add 1 tbsp water just to loosen the sauces.
Add fried paneer and mix.
Add salt, pepper pd and ajinomotto(optional).
Add spring onions and mix.
Switch off flame.When paneer is dry.
Chilli Paneer is ready .

Prawn Masala


Ingredients:
Prawns-300gms
Gingelly oil-2tbsp
Fennelseeds-1tsp
curryleaves
Onion-1
Gingergarlicpaste-1tsp
Tomato-1 small
Chillipd-2tsp
Turmeric
salt
Coriander leaves
To Grind:
Coconut chopped-1tbsp
Cuminseeds-3/4tsp
Pepper-1/2 tsp
Fennelseeds-3/4 tsp
Method:
In a mixie jar add coconut,pepper, cumin and fennel seeds.
Add little water and grind it fine paste.
Heat oil in a kadai and add fennel seeds,curryleaves, onion.
Add gingergarlic paste.
Add tomatoes.
Add chillipowder,turmeric and salt.Saute it.
Add deshelled and cleaned prawns.Stir.
Add 1/4 cup water and mix.
Cover and cook prawns for 10 mins.
Open lid,prawn cooked well, now add coriander leaves.
Stir and switch off flame,When its semigravy consistency.
Prawn masala is ready.

Mutton Varuval/Mutton Pepper Fry


Ingredients:
Mutton-300gms
Gingelly oil-2tbsp
Fennelseeds-1tsp
Cinnamon-smallpiece
Dry redchilli-2 broken
Onion-1 chopped finely
Curryleaves
Gingergarlicpaste-2tsp
Pepperpd-1.5tsp
Chillipd-1tsp
Coriander pd-1tsp
Cuminpd-3/4tsp
Turmeric
Salt
Coriander leaves
Method:
Add Cleaned mutton in pressure cooker along with turmeric,
salt,1/2 cup water .
Pressure cook mutton for 4 to 5 whistles in low to medium flame.
When pressure releases open cooker and keep mutton aside.
Heat kadai and add gingelly oil.
When oil is hot, Add fennel seeds, cinnamon and curryleaves,redchilli.
Add onion , ginger garlic paste.
Add spice powders.
Add cooked mutton water and stir.
Add cooked mutton,salt and saute it.
Saute mutton till dry consistency.
Add coriander leaves.
Switch off flame.
Mutton Varuval or Mutton pepper Fry  is ready to serve.

Chicken Frankie/Chicken Roll

Chicken Frankie is a famous street food and is very to make for
kids lunch box and office.
Ingredients
Cleaned boneless Chicken-200gms or 1 cup
Butter-2tsp
Big onion-1 chopped
GingerGarlic paste-2tsp
Chillipowder-2tsp
Turmericpowder
Pepperpowder to taste
Lemonjuice-1tsp
Garammasalapowder-1/2tsp
salt
corianderleaves
Eggs-3 
Rawonionslices

For Dough
Wholewheatflour-1/2 cup
Maida-1/2 cup
salt
Butter-1tbsp
Water as needed

Method
Knead a soft dough adding water and apply butter on top of dough.
Cover and Rest dough for 30 mins.
Add salt to eggs and beat well.
Cut chicken into small pieces.
Heat kadai and add butter.
Add cuminseeds,onion and saute it well.Add gingergarlicpaste.
Add chicken,chillipowder,turmeric,salt and mix.Add 1/4 cup water.Cover and cook chicken 10 mins.
After ten minutes, open lid now chicken will be cooked.
Add pepper powder,lemonjuice,garammasala powder,coriander leaves.Stir chicken ,till its dry completely.Break chicken into small piece using ladle and switch off flame.Take out chicken in bowl and let it cool.
Keep dough,beaten egg and cooled chicken ready.
Now dust and roll dough into round chapatis.
Heat tawa and grease with oil.
Place chapati on tawa and when bubbles appear turn other side.
Again turn chapati .
Again flip chapati other side and add beaten egg.
Turn other side after two mins and press with ladle so that the egg cooks.
Now take out chapati in plate and let it cool.
Now eggchapati,rawonionslices,chicken is ready.
Lets make frankie.
Now add chicken and raw onion slices on chapati .
Roll it tight.
Cross cut frankie in middle with sharp knife and enjoy.
Chicken Frankie/Chicken Roll is ready to serve.
